Quinoa Patties ~ Super Natural Everyday

 A pending goat birth and the busyness of spring farm tending, has proven the need for some quick and hearty meals. Super Natural Everyday has been my go to cookbook - Heidi Swanson knows healthy, while never leaving flavor and texture behind. One of my favorites are Quinoa Patties. It's a recipe that can be creatively altered based on what's in the fridge - luckily for us, onions, chives and  cheese are currently the main provisions of the farm. However, I can imagine Arugula, Kale, Pancetta and such a wide variety of cheese bundled into the Quinoa mixture. Satisfied by the crunchy, salty and hearty qualities - these patties easily rival Southern biscuits that we miss so dearly - yet we know just how healthy Heidi's recipe is.

Curry Cauliflower Soup. Cut a large onion in quarters, saute in 1 T canola oil until edges are slightly dark. Add 1 T flour, 1 T curry powder, salt and pepper. Stir and cook briefly. Add one head of cauliflower broken into florets. Use the stem also. Add broth or water to cover. Simmer until all is tender. At serving time, puree (leaving some chunks) with an immersion blender. Optional: add a bit of butter or cream. Serve with garlic croutons.

Yum, I love quinoa patties! I have a few differnt versions I make and they all tend to be based around what's in the fridge too :) I also make a similar recipe with millet, which behaves very similarly to quinoa I'm this. My go-to is usually a big pot of vege curry (whatever needs using up), brown rice, and homemade naan. Perfect for the cold nights we are now having in NZ!

Amy ~ Yes! Millet is a great idea! The veg curry sounds so warming.For the naan, do you have a recipe you can share? We've been testing some out lately.

Bevin said these were the best! I will have to try them soon. My favorite go to food is home made Leek soup. I usually have a good many onions, leeks, shallots, chives, scallions etc that have to be used up and that is when I throw together a pot. The kids love it! I will send the recipe over soon and for those that are not vegitarians you can always substitue the chicken broth for veggie broth and even add chicken if you wish. Very tasy and satisfying!
